Description

Ingredients

  • 2 slices sourdough bread
  • 1 tablespoon olive oil
  • 1 ounce feta cheese, crumbled
  • 1 ounce mozzarella cheese, sliced
  • 4 sun-dried tomatoes in oil, drained and chopped
  • 1 teaspoon dried oregano

Instructions

  1. Lightly brush one side of each slice of bread with olive oil.
  2. Flip the bread over. On the un-oiled side of one slice, layer the mozzarella cheese, then the feta cheese, chopped sun-dried tomatoes, and oregano.
  3. Top with the second slice of bread, oil-side up.
  4. Heat a skillet or griddle over medium heat.
  5. Place the sandwich in the hot skillet. Grill for 3 to 4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.
  6. Remove from the skillet and slice in half.

Notes

  • You can substitute halloumi cheese for some of the feta for a firmer texture.
  • Use good quality sourdough bread for the best results.
