A simple recipe for a grilled cheese sandwich featuring Mediterranean flavors like feta and sun-dried tomatoes.

- 2 slices sourdough bread
- 1 tablespoon olive oil
- 1 ounce feta cheese, crumbled
- 1 ounce mozzarella cheese, sliced
- 4 sun-dried tomatoes in oil, drained and chopped
- 1 teaspoon dried oregano
Instructions
- Lightly brush one side of each slice of bread with olive oil.
- Flip the bread over. On the un-oiled side of one slice, layer the mozzarella cheese, then the feta cheese, chopped sun-dried tomatoes, and oregano.
- Top with the second slice of bread, oil-side up.
- Heat a skillet or griddle over medium heat.
- Place the sandwich in the hot skillet. Grill for 3 to 4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.
- Remove from the skillet and slice in half.
Notes
- You can substitute halloumi cheese for some of the feta for a firmer texture.
- Use good quality sourdough bread for the best results.
