Description
A simple recipe for a comforting broccoli soup.
Ingredients

- 1 tablespoon butter
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 4 cups broccoli florets and stems, chopped
- 1/2 cup all-purpose flour
- 1 cup milk
- 1/2 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup shredded cheddar cheese (optional)
Instructions
- Melt butter in a large pot over medium heat.
- Add onion and cook until soft, about 5 minutes.
- Add garlic and cook for 1 minute more.
- Stir in flour and cook for 1 minute.
- Gradually whisk in broth until smooth.
- Add broccoli. Bring to a boil, then reduce heat and simmer until broccoli is tender, about 15 minutes.
- Use an immersion blender or carefully transfer soup to a regular blender to blend until smooth. Return soup to the pot.
- Stir in milk and heavy cream. Heat through, but do not boil.
- Season with salt and pepper.
- Stir in cheese, if using, until melted. Serve hot.
Notes
- For a thicker soup, simmer longer before blending.
- You can substitute half-and-half for the milk and heavy cream mixture.
