Description

A simple recipe for a comforting broccoli soup.


Ingredients

  • 1 tablespoon butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 4 cups broccoli florets and stems, chopped
  • 1/2 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup shredded cheddar cheese (optional)

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion and cook until soft, about 5 minutes.
  3. Add garlic and cook for 1 minute more.
  4. Stir in flour and cook for 1 minute.
  5. Gradually whisk in broth until smooth.
  6. Add broccoli. Bring to a boil, then reduce heat and simmer until broccoli is tender, about 15 minutes.
  7. Use an immersion blender or carefully transfer soup to a regular blender to blend until smooth. Return soup to the pot.
  8. Stir in milk and heavy cream. Heat through, but do not boil.
  9. Season with salt and pepper.
  10. Stir in cheese, if using, until melted. Serve hot.

Notes

  • For a thicker soup, simmer longer before blending.
  • You can substitute half-and-half for the milk and heavy cream mixture.
