A quick and easy cheesy nacho recipe perfect for game night.
Ingredients

- 1 bag tortilla chips
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup water
- 1 can refried beans
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- Optional toppings: salsa, sour cream, guacamole, jalapeños
Instructions
- Preheat your oven to 375°F (190°C).
- Brown the ground beef in a skillet over medium heat. Drain off any excess grease.
- Stir in the taco seasoning and water. Bring to a simmer and cook for 5 minutes, or until the sauce has thickened.
- Spread the tortilla chips in a single layer on a large baking sheet.
- Spread the refried beans evenly over the chips.
- Spoon the seasoned ground beef mixture over the beans.
- Sprinkle the chopped onion and bell pepper over the beef.
- Top with the shredded cheddar and Monterey Jack cheeses.
- Bake for 10-12 minutes, or until the cheese is melted and bubbly.
- Add your favorite optional toppings before serving.
Notes
- For crispier chips, toast them in the oven for a few minutes before adding toppings.
- You can substitute ground turkey or chicken for the ground beef.
- Make it vegetarian by omitting the meat and adding black beans or corn.
