Ingredients

  • 46 pounds beef ribs
  • 1/4 cup kosher salt
  • 2 tablespoons black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon paprika
  • 1 teaspoon cayenne pepper (optional)
  • 1 cup beef broth
  • 1/2 cup apple cider vinegar

Instructions

  1. Preheat your smoker to 250°F (121°C).
  2. Combine salt, pepper, garlic powder, onion powder, paprika, and cayenne pepper in a small bowl.
  3. Generously season the beef ribs on all sides with the spice rub.
  4. Place the ribs directly on the smoker grates, bone-side down.
  5. Smoke for 3-4 hours, or until the ribs reach an internal temperature of 160°F (71°C).
  6. Remove ribs from the smoker and place them on a large sheet of heavy-duty aluminum foil.
  7. Pour the beef broth and apple cider vinegar over the ribs.
  8. Tightly wrap the ribs in the foil.
  9. Return the wrapped ribs to the smoker and cook for another 2-3 hours, or until the meat is tender and pulls away from the bone easily.
  10. Remove from the smoker, let rest for 15 minutes, then unwrap and serve.

Notes

  • For a crispier bark, you can unwrap the ribs for the last 30 minutes of cooking.
