Soft, sweet vegan rolls filled with apple, maple, and cinnamon.

- 1 cup warm plant milk
- 2 1/4 teaspoons active dry yeast
- 1/4 cup maple syrup plus more for glaze
- 1/4 cup melted vegan butter
- 3 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1/2 cup vegan butter, softened
- 1/2 cup packed brown sugar
- 2 teaspoons ground cinnamon
- 1 small apple, finely diced
Instructions
- Combine warm plant milk, yeast, and 1 teaspoon of maple syrup in a bowl. Let stand 5 minutes until foamy.
- Stir in the remaining maple syrup and melted vegan butter into the yeast mixture.
- In a separate large bowl, whisk flour and salt.
- Add the wet ingredients to the dry ingredients and mix until a shaggy dough forms. Knead on a floured surface for 5-7 minutes until smooth.
- Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled.
- Punch down the dough. Roll it out into a rectangle about 12×18 inches.
- Spread the softened vegan butter evenly over the dough.
- Mix brown sugar and cinnamon. Sprinkle this mixture over the butter. Scatter the diced apple over the top.
- Roll the dough tightly starting from the long edge. Cut into 12 equal rolls.
- Place rolls in a greased 9×13 inch baking dish. Cover and let rise for 30 minutes.
- Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius).
- Bake for 20-25 minutes until golden brown.
- Drizzle with extra maple syrup before serving.
Notes
- If your kitchen is cold, place the covered dough in a slightly warm oven (turned off) to aid rising.
- Use firm apples like Granny Smith for the best texture.
