- 1.5 cups all-purpose flour
- 1 teaspoon baking soda
- 0.5 teaspoon baking powder
- 0.5 teaspoon salt
- 1 teaspoon ground cinnamon
- 0.5 teaspoon ground nutmeg
- 0.25 teaspoon ground cloves
- 1 cup unsweetened applesauce
- 0.75 cup granulated sugar
- 0.33 cup vegetable oil
- 0.25 cup unsweetened plant-based milk
- 1 teaspoon vanilla extract
- 1 cup diced apple
Instructions
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it.
- In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
- In a separate bowl, combine the applesauce, sugar, vegetable oil, plant-based milk, and vanilla extract. Mix well.
- Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in the diced apple.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For extra flavor, you can add a sprinkle of sugar and cinnamon on top of the muffins before baking.
- Ensure your apples are diced into small, uniform pieces for even baking.
