  • 1/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons cold vegan butter, cut into small pieces

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and 1 teaspoon of cinnamon.
  3. In a large bowl, cream together the softened vegan butter and 3/4 cup sugar until light and fluffy. Beat in the vanilla extract.
  4. Stir in the mashed bananas and plant-based milk until just combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Prepare the crunch topping: In a small bowl, combine the 1/4 cup flour, 1/4 cup sugar, and 1 teaspoon cinnamon. Cut in the cold vegan butter with a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  7. Pour the banana bread batter into the prepared loaf pan. Sprinkle the crunch topping evenly over the batter.
  8. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
