Description

Small, baked donut holes flavored with classic gingerbread spices, suitable for a vegan diet.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup packed brown sugar
  • 1/4 cup unsweetened applesauce
  • 1/4 cup plant-based milk
  • 1/4 cup molasses
  • 1 teaspoon vanilla extract
  • For Glaze: 1 cup powdered sugar
  • For Glaze: 2 tablespoons plant-based milk
  • For Glaze: 1/4 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a mini donut pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
  3. In a separate large bowl, mix the brown sugar, applesauce, plant-based milk, molasses, and vanilla extract until combined.
  4. Add the dry ingredients to the wet ingredients. Mix until just combined; do not overmix.
  5. Spoon the batter into the prepared mini donut pan cavities, filling each about two-thirds full.
  6. Bake for 9 to 11 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the donut holes cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  8. While cooling, prepare the glaze: Whisk together the powdered sugar, plant-based milk, and vanilla extract until smooth.
  9. Dip or drizzle the cooled donut holes in the glaze. Let the glaze set before serving.

Notes

  • You can use a piping bag or a zip-top bag with the corner snipped off to easily fill the donut pan cavities.
  • For a stronger ginger flavor, add an extra 1/4 teaspoon of ground ginger to the dry mix.
