Description

Ingredients

  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons poppy seeds
  • 1 cup unsweetened plant milk
  • 1/4 cup melted vegan butter
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for glaze)
  • 1 tablespoon lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Lightly grease a donut pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and poppy seeds.
  3. In a separate bowl, mix the plant milk, melted vegan butter, lemon juice, lemon zest, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Spoon or pipe the batter evenly into the prepared donut pan cavities, filling each about two-thirds full.
  6. Bake for 10 to 12 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the donuts cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  8. While the donuts cool, prepare the glaze by whisking together the powdered sugar and 1 tablespoon of lemon juice until smooth.
  9. Dip the top of each cooled donut into the glaze and return them to the wire rack to allow the glaze to set.

Notes

  • For a thicker glaze, use less lemon juice.
  • You can use any plain, unsweetened plant milk like soy or almond.
