Recipe for baked vegan pumpkin donuts topped with a simple glaze.

- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/2 cup pumpkin puree
- 1/2 cup granulated sugar
- 1/4 cup packed light brown sugar
- 1/4 cup unsweetened applesauce
- 1/4 cup non-dairy milk
- 1 teaspoon vanilla extract
- For the Glaze: 1 cup powdered sugar
- 2 tablespoons non-dairy milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 12-cup donut pan.
- In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
- In a large bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, applesauce, non-dairy milk, and vanilla extract until smooth.
- Add the dry ingredients to the wet ingredients. Mix until just combined; do not overmix.
- Spoon or pipe the batter evenly into the prepared donut pan, filling each cup about two-thirds full.
- Bake for 10 to 12 minutes, or until a toothpick inserted into the center comes out clean.
- Let the donuts cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
- To make the glaze, whisk together the powdered sugar, non-dairy milk, and vanilla extract in a small bowl until smooth.
- Dip the top of each cooled donut into the glaze. Let the glaze set before serving.
Notes
- You can use pumpkin pie spice blend instead of individual spices.
- If you do not have a donut pan, you can bake the batter in muffin tins for about 18-20 minutes.
