A simple and delicious vegan vanilla cake with crushed Oreos.
Ingredients

- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsweetened plant-based milk
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 tablespoon white vinegar
- 1/2 cup crushed Oreos
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
- In a large bowl, whisk together the flour, sugar, baking soda, and salt.
- In a separate bowl, whisk together the plant-based milk, vegetable oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Stir in the white vinegar and then gently fold in the crushed Oreos.
- Pour the batter into the prepared cake pan and spread evenly.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
Notes
- You can add vegan frosting of your choice.
- Decorate with extra crushed Oreos if desired.
