- For the frosting:

- 3 cups powdered sugar

Instructions
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in egg whites one at a time, then stir in vanilla extract.
- Gradually add dry ingredients to wet ingredients, alternating with buttermilk, beginning and ending with dry ingredients. Mix until just combined.
- Divide batter evenly among prepared muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Let cupcakes cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
- For the frosting: In a large bowl, beat softened butter until creamy.
- Gradually add powdered sugar, one cup at a time, beating until smooth.
- Stir in vanilla extract. Add milk one tablespoon at a time until desired frosting consistency is reached.
- Once cupcakes are completely cool, frost them as desired.
